Chapman was born in Hong Kong to a Chinese mother and a New Zealand father. He attended King George V School in Kowloon, where he played cricket for the school team. He also played for the Hong Kong national team at the youth level.
Chapman made his first-class debut for Auckland in the 2015–16 season. He had a successful season, scoring 700 runs at an average of 43.75, including two centuries. He also made his List A debut for Auckland in the same season.
Chapman made his ODI debut for Hong Kong against the United Arab Emirates in November 2015. He scored a century on debut, becoming the tenth player to do so in ODI history. He also made his T20I debut for Hong Kong in March 2014.
Chapman made his ODI debut for New Zealand against England in February 2018. He has played 12 ODIs for New Zealand to date, scoring 380 runs at an average of 38. He has also scored two half-centuries.
