Petha is a world famous sweet dish from India. Likewise, Burfi is another popular sweet dish of iNdian cuisine. Here is an easy recipe combining the two sweet favorites to give a perfect combination in the form of Petha Burfi.
Ingredients
- 1 kg White Pumpkin
- 1/2 Kg Sugar
- 2 tsp Calcium Hydroxide
- 1/2 tsp Alum powder
- Drops of Rose water
- Drops of Kewra Essence
- 2 cup Water
Method
- Take 1/2 cup of water and dissolve alum in it. Keep it aside.
- Dissolve calcium hydroxide in liter water.
- Strain with a clean cloth twice.
- Now peel pumpki and discard seeds.
- Mush it from center and cut into rectangular shapes.
- Using a fork, prick all over.
- Put pieces in calcium hydroxide water and soak for 30 minutes.
- Drain and wash under clean running water for 2-3 minutes.
- Put in a bowl and sprinkle alum water.
- Shake accordingly so as to coat all pieces evenly.
- Take a large heavy pan to boil the pieces after draining them properly.
- Boil til a little soft and exuding water.
- Prepare sugar syrup by boiling sugar and water, till 2 1/2 thread consistency.
- Put drained pumpkin pieces in syrup.
- Now boil the syrup till it becomes thick again.
- Remove from the heat and keep it covered with a mesh for overnight.
